UKIYO
Kaiten sushi as theater, on Lincoln Road. A NOAH Hospitality Group restaurant.
Ukiyo means the floating world. A place where the evening moves and you do not have to.
At UKIYO the dinner comes to you. A custom belt carries nigiri, sashimi and rolls through the room while the chefs work in full view. Each plate is placed on the belt as its own small performance. Water runs through the space. Lanterns keep the light low.
It is a tradition Japan has kept for seventy years. We built a room around it.

“Hospitality has never been about simply serving food. It’s about creating emotion.”
Philippe Kalifa, Founder, NOAH Hospitality Group
Fish from Toyosu and Tsukiji. Rice cooked at the table. A cart that finds you.

The belt
Nigiri, sashimi and specialty rolls in constant motion. The Ukiyo Roll: tuna, salmon, hiramasa, Hokkaido scallop, soy glazed wagyu, umami crunch.

The cart
The House Dumpling Cart moves through the room with a rotating selection of beef, pork, chicken, shrimp and vegetable dumplings. Pan fried, steamed or deep fried, your call.

The table
Kamameshi cooked in its own iron pot at your table, finished with grilled skirt steak and a Jidori egg. From the robata: cumin soy wagyu, yakitori glazed chicken. Paitan ramen for the late hours.
Executive Chef Nono Shigetomi

Stone. Brass. Water. Wood.
Seven thousand square feet on the second level of Lincoln Road, indoors and out, designed by Casa Medina Design Studio.
Rosso Lepanto stone and emerald marble under lantern light. Handcrafted millwork. A water feature that runs the length of the room. The belt at the center of it all.
